1/2 large yellow bell pepper, sliced

- Add olive oil. Then, add onions. Pan fried for 1 minute. Add bell peppers. Sauteed for another minute.
- Add organic sauerkraut and ground black pepper. Sautee until all vegetables are browned and heated through.

- Assemble the hot dog buns and sausages together, Then,add toppings and mustard.
- Serve immediately.
These are some of my favorite summer recipes that just happen to be vegan:
CALICO CORN SALAD
1 (16-oz) package frozen corn thawed ( Preferred fresh corn)
2 small zucchinis, diced
1/4 large red pepper, diced
1/2 small onion, chopped
1 (4-oz) can diced green chiles, drained
1/4 cup olive or vegetable oil
2 Tablespoons freshly squeezed lime juice
1/2 Tablespoon cider vinegar
3/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
Toss together corn, zucchini, red pepper, onion, and chiles in a large bowl.
Measure remaining ingredients into a jar or bottle with a lid. Shake well.
Pour liquid over salad and stir gently. Refrigerate overnight.
GRILLED VEGETABLES
1 cup olive oil
1 Tbsp. each: Garlic powder, Dried basil, parsley, oregano, herbes de
Salt and pepper to taste
4 - 5 pounds mixed vegetables (Zucchini, Red and yellow bell peppers, eggplant, onion, etc)
1/4 cup vegan red wine or red wine vinegar
Mix olive oil and spices together, preferably the day before.
Halve smaller vegetables lengthwise. Quarter onions and bell peppers. Cut larger squashes crosswise.
When coals are ready, dip vegetables into olive oil mixture. BBQ until just soft. Arrange on a platter.
Mix remaining marinade with wine or wine vinegar, and pour over vegetables.
PESTO PASTA SALAD
1 (12 or 16-ounce)whole wheat package mini-penne or bow-tie pasta
1/4 cup pine nuts
2 cups fresh basil, firmly packed
1/3 cup fresh parsley
14 garlic cloves (yes, really. Fourteen)
1/4 cup organic or vegan white wine
1 slice roasted or fresh red bell pepper
Pinch sea salt
1/2 - 1 cup olive oil
2 cups sliced shiitake mushrooms
3/4 cup frozen edamame
8 sun-dried tomatoes in oil.
In a large pot of boiling water, cook pasta according to package directions. If the pasta is done before you finish making the pesto, toss with a little olive oil and set aside.
Meanwhile, Toast pine nuts in a toaster oven or in a pan over the stove for 3-4 minutes, watching not to burn them.
In a blender or food processor, combine pine nuts, basil, parsley, garlic, wine, bell pepper and salt with 1/2 cup olive oil. Blend. Keep blending and adding olive oil until pesto has reached its desired consistency.
In a medium pan, saute the mushrooms in a Tablespoon of olive oil until they begin to change color to a light tan, about 4 minutes.
Put the edamame in a bowl with a few tablespoons of water and microwave for 2 minutes, then drain (If you have your timing down you could just add them to the pasta a few minutes before it is done).
Slice the sun-dried tomatoes carefully into thin strips (they are slippery).
Toss everything together in a big bowl and refrigerate.

In a perfect world, we would buy all of our groceries organic
More info and part 2 in the players menu.
Filmed with 3 cameras, this fascinating presentation shows Howard Lyman, aka, "The Mad Cowboy" at his inspiring best, talking about being vegan, the environment, climate change, mad cow disease, his life, activism, and more.
This clip is the 1st 3 minutes of the interactive DVD. The quality of the video on the DVD is far superior than the clips as I had limited time and advance notice in preparing them.
DVD is available at:

In a perfect world, we would buy all of our groceries organic. Unfortunately, organic food is still more expensive (although the price is continually dropping) or even unavailable. To make wiser consumer choices here is a list of produce with the highest level of pesticide contamination. The following list is based on information and studies by the United States Department of Agriculture (USDA), Consumer Reports, and the Environmental Working Group.
- Nectarines – 97.3% of nectarines sampled were found to contain pesticides.
- Celery – 94.5% of celery sampled were found to contain pesticides.
- Pears – 94.4% of pears sampled were found to contain pesticides.
- Peaches – 93.7% of peaches sampled were found to contain pesticides.
- Apples – 91% of apples sampled were found to contain pesticides.
- Cherries – 91% of cherries sampled were found to contain pesticides.
- Strawberries – 90% of strawberries sampled were found to contain pesticides.
- Imported Grapes – 86% of imported grapes (i.e. Chile) sampled were found to contain pesticides.
- Spinach – 83.4% of spinach sampled were found to contain pesticides.
- Potatoes – 79.3% of potatoes sampled were found to contain pesticides.
- Bell Peppers – 68% of bell peppers sampled were found to contain pesticides.
- Red Raspberries – 59% of red raspberries sampled were found to contain pesticides.

save animals
“The greatness of a nation and its moral progress can be judged by the way its animals are treated” -Mahatma Gandhi 3 years ago
UNIVERSAL DECLARATION OF ANIMAL RIGHTS
Preamble:
Considering that Life is one, all living beings having a common origin and having diversified in the course of the evolution of the species, – Considering that all living beings possess natural rights, and that any animal with a nervous system has specific rights,
Considering that the contempt for, and even the simple ignorance of, these natural rights, cause serious damage to Nature and lead men to commit crimes against animals,
Considering that the coexistence of species implies a recognition by the human species of the right of other animal species to live,
Considering that the respect of animals by humans is inseparable from the respect of men for each other,
It is hereby proclaimed that :
* Article 1
All animals have equal rights to exist within the context of biological equilibrium. This equality of rights does not overshadow the diversity of species and of individuals.
* Article 2
All animal life has the right to be respected.
* Article 3
1°- Animals must not be subjected to bad treatments or to cruel acts.
2°- If it is necessary to kill an animal, it must be instantaneous, painless and cause no apprehension.
3°- A dead animal must be treated with decency.
* Article 4
1°- Wild animals have the right to live and to reproduce in freedom in their own natural environment. 2°- The prolonged deprivation of the freedom of wild animals, hunting and fishing practised as a pastime, as well as any use of wild animals for reasons that are not vital, are contrary to this fundamental right.
* Article 5
1°- Any animal which is dependent on man has the right to proper sustenance and care.
2°- It must under no circumstances be abandoned or killed unjustifiably.
3°- All forms of breeding and uses of the animal must respect the physiology and behaviour specific to the species.
4°- Exhibitions, shows and films involving animals must also respect their dignity and must not include any violence whatsoever.
* Article 6
1°- Experiments on animals entailing physical or psychological suffering violate the rights of animals.
2°-Replacement methods must be developed and systematically implemented.
* Article 7
Any act unnecessary involving the death of an animal, and any decision leading to such an act, constitute a crime against life.
* Article 8
1°- Any act compromising the survival of a wild species and any decision leading to such an act are tantamount to genocide, that is to say, a crime against the species.
2°- The massacre of wild animals, and the pollution and destruction of biotopes are acts of genocide.
* Article 9
1°- The specific legal status of animals and their rights must be recognised by law. 2°- The protection and safety of animals must be represented at the level of Governmental organizations.
* Article 10
Educational and schooling authorities must ensure that citizens learn from childhood to observe, understand and respect animals.

Why Vegan, Living Vegan
LIVING VEGAN There are many alternatives to leather, wool, and down. And many are available at local stores. For example, Payless Shoes is a dependable source for inexpensive vegan shoes. Higher quality vegan shoes, whose longevity and comfort may be closer to leather shoes, are available from Moo Shoes and Otsu, as well as Vegan Essentials , The Vegetarian Site, and Pangea (both also sell a variety of vegan products, including clothing, accessories, food, personal care items, cleaning products and more). Acrylic and 'polar fleece' are popular alternatives to wool, available at many clothing stores. Sleeping bags and coats stuffed with Thinsulate, Polyfil, and other synthetic insulation are often warmer than those stuffed with goose-down. In addition, synthetic insulation retains its properties when wet. Most outdoor stores carry many options.
Big factory pig farms are some of America's worst polluters
It's an investigative piece on how Smithfield Foods, America's largest hog slaughterer, circumvents law, pollutes like crazy, and creates antibiotic and vaccine-laden pork products that feed our country. I don't intend to become one of those annoying vegangelicals who tries to convert everyone to tempeh, but this was just a fascinating read:
Smithfield's holding ponds -- the company calls them lagoons -- cover as much as 120,000 square feet. The area around a single slaughterhouse can contain hundreds of lagoons, some of which run thirty feet deep. The liquid in them is not brown. The interactions between the bacteria and blood and afterbirths and stillborn piglets and urine and excrement and chemicals and drugs turn the lagoons pink.----------------Even light rains can cause lagoons to overflow; major floods have transformed entire counties into pig-shit bayous. To alleviate swelling lagoons, workers sometimes pump the shit out of them and spray the waste on surrounding fields, which results in what the industry daintily refers to as "overapplication." This can turn hundreds of acres -- thousands of football fields -- into shallow mud puddles of pig shit. Tree branches drip with pig shit.
Some pig-farm lagoons have polyethylene liners, which can be punctured by rocks in the ground, allowing shit to seep beneath the liners and spread and ferment. Gases from the fermentation can inflate the liner like a hot-air balloon and rise in an expanding, accelerating bubble, forcing thousands of tons of feces out of the lagoon in all directions.
The lagoons themselves are so viscous and venomous that if someone falls in it is foolish to try to save him. A few years ago, a truck driver in Oklahoma was transferring pig shit to a lagoon when he and his truck went over the side. It took almost three weeks to recover his body. In 1992, when a worker making repairs to a lagoon in Minnesota began to choke to death on the fumes, another worker dived in after him, and they died the same death. In another instance, a worker who was repairing a lagoon in Michigan was overcome by the fumes and fell in. His fifteen-year-old nephew dived in to save him but was overcome, the worker's cousin went in to save the teenager but was overcome, the worker's older brother dived in to save them but was overcome, and then the worker's father dived in. They all died in pig shit.

Genetically Modified Organisms by the N3TWORK
Hi, I just wanted to let you know about a new San Diego, CA based grassroots online media organization called the N3TWORK @ www.YourNetwork.tv
Our site features mini documentary style videos highlighting issues that are not typically emphasized by the corporate press, like genetically modified foods.
Our GMO episode covers what they are, how long we have been eating them, and what the health risks are. The N3TWORK describes how this relates to the community at large and what we can do as food consumers to have a choice in the matter.
What is GMO, or genetically modified organism? And how do GMOs relate to what we are eating? How long have we been eating GMO foods and what are the health risks? If GMOs are safe then why have so many countries taken the initiative to ban or require labeling of them? The N3TWORK researches this subject and gets professional opinions on both sides to reveal the dispute and uncover the facts. After addressing the misconceptions about GMOs, The N3TWORK describes how this relates to the community at large and what we can do as food consumers to have our voices heard in this important debate.

Chef Mayra’s Hearty Vegan Crockpot Stew
Chef Mayra’s Hearty Vegan Crock pot Stew
Serves: 8-10 Preparation time: 4-7 hours
5 cups faux “chicken” broth
3 tablespoons brigs Amino acids sauce
1 teaspoon organic Italian seasoning
salt and pepper to taste
5 tablespoons vegan Worcestershire or TAMARI
3 heaping tablespoons whisked with a little water until not lumpy
1 8 oz can organic tomato sauce
1-2 cans organic diced roma tomatoes with basil and garlic
3 cloves of garlic, crushed
1 1/2 cup chopped onion
1/2 cup white mushrooms, diced
1 small sweet potato and 4 carrots, peeled and chopped
2-3 zucchini, sliced
2 cups of cauliflower
3/4 cup corn
3/4 cup peas
1/2 cup uncooked quinoa
3/4 cup uncooked red lentils
1 cup regular garbanzo beans
1 cup green garbanzo beans
Directions:
The directions for this are pretty simple: I just throw everything in (I refuse to pre-sauté anything or add ingredients at different times because that defeats the purpose of the Crockpot, to me*), leave it for 6-8 hours on low, or 4 or so hours on high, come back et voila: dinner!
Chef Notes:
This stew is high protein and really yum. You'll get a lot of meals out of this with minimal effort.
I like to garnish each bowl with a dollop of Tofutti before serving.
Sometimes I also like to add 1/2 cup of chopped walnuts and Fresh Spinach and Cilantro chopped to the stew before serving.
*If you want, you might sauté the onions, garlic, and mushrooms in a little light olive oil before tossing them in. Personally I think they taste fine either way is a choice that you have.
